Oatmeal Toffee Chocolate Chip Cookies


I have another oatmeal cookie recipe for you that I think you will love.  These cookies are full of oatmeal, toffee bits, and chocolate.  They are crisp/chewy and delicious.  Maybe not groundbreaking, but definitely a winning combination!

Oatmeal Toffee Chocolate Chip Cookies

1/2 cup butter
1 cup brown sugar, packed
1 egg
1 teaspoon vanilla extract
3/4 cup plus 2 Tablespoons all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup quick cooking oatmeal
1/2 cup old fashioned oatmeal
3/4 cup milk chocolate chips
3/4 cup toffee bits

Preheat the oven to 350F.  Line a baking sheet with parchment paper.

Cream together the butter and brown sugar until completely combined and smooth.  Beat in the egg and vanilla extract.  Add the flour, baking soda, baking powder, salt, quick cooking oatmeal, and old fashioned oatmeal.  Beat until blended and no streaks of flour remain. Stir in the chocolate chips and toffee bits. 

Drop dough by heaping tablespoonfuls on the prepared baking sheet.  Bake for about 12-13 minutes, or until the cookies are lightly browned at the edges.  Remove from oven and let cool on the pan for several minutes before transferring to a cooling rack.  Makes about 18 cookies.
