Triple Berry Cornmeal White Chocolate Chip Cookies
I found this recipe a couple of weeks ago and have been meaning to give it a whirl ever since. I always love adding different things into baked goods, such as cornmeal, oatmeal, oat or wheat bran, etc. I have used cornmeal in a cookie before with these Cranberry Cornmeal Cookies, and I love the rustic crunch. These cookies are a little different, but incredibly delicious. I made a few changes to the recipe and came up with something that we love!
Triple Berry Cornmeal White Chocolate Chip Cookies
3/4 cup butter, room temperature
1 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 1/2 teaspoons vanilla extract
1 3/4 cups all purpose flour
1/2 cup cornmeal
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup dried cranberries, cherries, and blueberries (I found this at Walmart)
1/2 cup white chocolate chips
Preheat the oven to 350F. Line a baking sheet with parchment paper.
Cream together the butter, granulated sugar, and brown sugar. Beat in the egg and vanilla extract. Stir in the flour, cornmeal, baking powder, baking soda, and salt until the dough is combined. Stir in the dried fruit and white chocolate chips.
Drop the dough by heaping tablespoonfuls onto the prepared baking sheet. Bake for about 12 to 14 minutes, or until the edges are just golden brown and the centers are just set. Remove from the oven and let cool on the pan for several minutes. Transfer cookies to a wire rack and let cool completely. Makes 24 cookies.
